Super Tasty Rajma Salad


I am a big fan of kidney beans (rajma). Whenever my mum makes kidney beans (rajma), she sets aside half of it for later consumption before making the curry with the rest and I always end up making a very tasty rajma salad with it. Kidney beans salad is a very good option when you have to have a snack between meals and it is also rich in iron and enhances haemoglobin levels.

It takes only 10 minutes to prepare this salad, of-course with a pre prepared boiled rajma in hand.

Preparation Time: 10 mins, Makes 4 servings


2 cups soaked and boiled rajma (kidney beans)
1/2 cup chopped tomatoes
1/2 cup thinly sliced onions
1 tbsp finely chopped spring onion greens
1/2 cup shredded iceberg lettuce


2 tbsp coriander
1 tbsp lemon juice
½ tsp finely chopped green chillies
salt to taste


Combine all the ingredients for the salad in a bowl, toss well and refrigerate for at least 1 hour.

Just before serving, add the dressing and toss well.

Serve immediately to avoid sogginess.
